1. Enhanced Flavor through Long-Term Raising! It is said that Wagyu becomes more delicious with long-term raising, specifically after 30 months. However, recently some Wagyu farmers use hormones to grow them quickly. At OLU BURGER KYOTO, farmers are thoroughly committed to the environment and feed, raising delicious and safe Wagyu. 2. Further Umami through Dry Aging! To maximize the potential of safe Wagyu, we proceed with dry aging. This increases amino acids, resulting in a Wagyu patty with enhanced umami. 3. No Fillers! We do not add flour or eggs to bulk up the patty. Our focus is on a 100% Kyoto Wagyu patty with no additives, overflowing with meat juice. 4. The Taste of Wagyu! We are committed to maximizing the umami of the Wagyu itself, so we only season it with salt. It is a simple yet flavorful Wagyu patty! 5. Always Fresh, Never Frozen! Freezing once can diminish the flavor, which is why we always use fresh meat for our patties, allowing for a strong taste.
Homemade buns baked fresh in-house every day! LAND BAKERY, which was located in Kyoto's Kojinguchi, had buns that were difficult to purchase even if you lined up from 3 AM. What kind of buns pair well with the juicy Wagyu patty? After numerous trials and experiments, we created these buns. Even on their own, the aroma of wheat and butter is rich and delicious. They have a perfect balance of flavor that does not overpower the umami of the Wagyu. These homemade buns are crafted with the overall balance in mind.
