We couldn't coordinate our schedule very well, and the date we decided on was Sunday!
I tried to find a restaurant, but many of them were closed on Sundays, and I can't tell you how many I was turned down...
Finally, we found this place!

Located a 5 minute walk north of Nishi-ohashi station on the Osaka Metro Nagahori Tsurumi-ryokuchi Line.
It is located on the B1F, but you can easily find it by going down the stairs from the ground level.
Inside the restaurant, there is a U-shaped counter, a table for two, and a table for four.
We visited the restaurant with a reservation, but they refused to accept people who came on a first-come, first-served basis.
I think it is better to go there after making a reservation because the restaurant is run by one person.

It was exactly 6 years ago that I learned about a food called cassoulet!
What is cassoulet?
A bean dish from southwestern France. It is a bean stew or casserole made by simmering pork sausage, lamb, goose, duck, etc. and white kidney beans in a deep earthenware pot called a cassole, from which the dish takes its name, for a long time. (Excerpt from Wiki)
The first time I ate cassoulet, it was really delicious and my favorite!
I wanted to try a delicious cassoulet for the first time in a long time, so I visited Bistrotobacchus!
The location is about a 7.8 minute walk north from Nishi-ohashi station on the Osaka Metro Nagahori Tsurumi-ryokuchi Line.
Inside the restaurant, there are 4 counter seats, 1 table with 4 seats and 2 tables with 2 seats.
The restaurant is run by a single chef.

It was August when we visited the restaurant, and I was so thirsty that I had no choice but to drink it.
It's a kind of stewed pig's head with a strong, mild and delicious flavor.

Cassoulet
Today's main dish is, of course, cassoulet! Because this is what we came here to eat! The meat on the bone comes right off the bone!
And what is so delicious with the cassoulet is these white beans!
The white beans absorb the flavor of the meat and are soft and limp, which is indescribable!
The saltiness is just right, too!
Personally, I prefer it with sausage, but it's more than enough!
I learned to eat cassoulet here and tried it elsewhere, but... there is no place that can top it.
I've tried other places since I learned how to make cassoulet, but... there is no place that surpasses this place!
I want to go back just for this! Peach compote
Half-cut peach compote and vanilla ice cream!
The ice cream is absolutely homemade!
The juiciness of the peaches and the richness of the vanilla go so well together.
This is just chocolate as it should be!
It was so rich and mellow that you could enjoy the aftertaste in your mouth!
I haven't had cassoulet in 6 years, and this is the best one I've ever had!
The saltiness and the crunchiness of the green beans are truly exquisite!
