A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution of the ecosystem in the bottle result in a distinctively complex and elegant natural beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions in the blend, etc. When cellared properly, 3 Fonteinen Oude Geuze can be aged for several decades. 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. The kriek lambic ferments in the bottle for at least another six months and develops into an intense wine-like fruit lambic. Originally, this beer was made for the 10 year anniversary of Moeder Lambic, with Pinot Noir grapes coming from Valentin Zusslin Estate, cultivated in biodynamic viticulture and harvested by hand on their Bollenberg vineyard

bzart Kriekenlambiek Brut Nature originated from collaboration between Domus Ad Fontes and the brewery 'Brouwerij Oud Beersel'. Oud Beersel is known for its lambiek (lambic) that is brewed according to the traditional artisan method and Domus Ad Fontes as a winemaker with the oldest vineyard in Belgium where beautiful, sparkling pure brut wines are made. bzart Kriekenlambiek Brut Nature is a sparkling pure brut quality beverage based on "Kriekenlambiek Oud Beersel" (cherry Lambic of Oud Beersel) which is a craft beer produced according to the traditional rules of the "Méthode Classique". Cherry Lambic is a Belgian spontaneous fermentation beer made of Lambic to which sour cherries are added. The used "Kriekenlambiek Oud Beersel" is traditionally brewed with real sour cherries and with Lambic Oud Beersel that matured in wooden barrels. It contains some 400 grams of sour cherries a litre which is unique in its kind. This kriekenlambiek is bottled and then the "Méthode Classique" (Classic Method) is applied during several months. This means that after adding sugar and a sparkling wine yeast, the "liqueur de tirage", this kriekenlambiek is re-fermented. Carbon dioxide develops and is locked in the bottle which causes the kriekenlambiek to become effervescent. Other intrinsical steps, such as the "remuage" (riddling) and the "dégorgement" (disgorging) follow, which eventually lead to a sparkling, refined beverage. It is typical for bzart Kriekenlambiek that no "liqueur d'expédition" (shipment liquor) is applied before adding the cork. This beverage also combines the best of two worlds, the festive character of sparkling wine and the full flavour of artisan brewed kriekenlambiek. Traditionally it is said that women prefer a glass of bubbly as an aperitif while most men rather have a quality beer. In some restaurants they have been searching for years for a beverage that will please both women and men. bzart Kriekenlambiek Brut Nature ends this search beautifully and it is probably the first and only sparkling kriekenlambiek beer in the world. This sparkling kriekenlambiek brut nature has an alcohol percentage of 8% volume and is poured from bottles that contain 75cl. The taste and the aftertaste are quite "fraîcheur" (fresh) which make you remember the real 'kriekentaart' (sour cherry pie) of the good old days. bzart Kriekenlambiek is a delicious aperitif and perfect to pair with dark chocolate, blue-veined cheese, game and all preparations with almonds. bzart Kriekenlambiek is already mentioned on the menu of renowned restaurants and is distributed by famous beverage merchants

Breaking the mold among existing beer styles, Lindemans developed the botanical lambics, a collection of old gueuzes with a twist. Third in this series, GingerGueuze is based on a blend of 12mth old lambic with 2-3yr old lambic, fermented in oak with fresh ginger. Bottle conditioned, GingerGueuze has a golden colour, and combines the sourness of lambic with the subtle flavours of fresh ginger. Ideal as an apertif, it is also perfect for food pairing. Gueuze Cuvée René is one of the jewels of our brewery. With its golden colour, its sparkle and its beautiful sherry aromas, this is the queen of gueuzes. This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional! The use of a champagne bottle dates back to an uncertain time period when lambic brewers specialised in recovering empty bottles from great restaurants and other establishments where a lot of champagne was consumed. That is why we chose the most noble of bottles to hold our noblest beer
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It's a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the "best before" date! Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You'll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures
For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings
Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries
Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine. The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. This is soft mildness personified
Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the "best before" date! The soft, mildly sour berry taste, harmonises with the oak barrels' aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime

Bottling date: 25/07/19 This Zenne y Frontera is a blend of ten different sherry barrels - nine Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. The lambics originate from five different brews and were all a good year old when filling the sherry barrels. Accordingly, the weighted average age upon bottling was a tad more than 24 months. 100% 3 Fonteinen. NL 3 Fonteinen Zenne y Frontera is een unieke creatie van Armand Debelder en maître-sommelier Andy De Brouwer. Bottling date: 24/07/19 This Zenne y Frontera is a blend of ten different sherry barrels - nine Oloroso barrels and one Amontillado barrel. The Oloroso barrels were more than fourty years old. We filled these with young lambic from four different brews and some with four month-old lambic wort. The weighted average age upon bottling was 21 months. 100% 3 Fonteinen. This Zenne y Frontera is a blend of eleven different sherry barrels - ten Oloroso barrels and one Amontillado barrel. The Oloroso bar-rels were more than fourty years old. The lambics originate from four different brews and were all a good year old when filling the sherry barrels. Accordingly, the weighted average age upon bottling was a tad more than 25 months. 100% 3 Fonteinen. Batch 6. Beginning of 2017, we acquired a second set of 21 Oloroso and 7 PX barrels and aged young lambic on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 5 (blend 49). 3 Fonteinen Oude Geuze Golden Blend is a blend of one-, two-, three-and at least 25% four-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. When cellared properly, 3 Fonteinen Golden Blend can be aged for several decades. Deze specifieke (Oude Kriek) Robijn heeft niet minder dan 8 maanden gemacereerd. This sour cherry lambic is then blended with more lambic to obtain a minimum intensity of 35% fruit. The kriek lambic ferments in the bottle for at least another five months, and develops into a more complex Oude Kriek. De maceraties gebeurden allemaal op vat. NL 3 Fonteinen Aardbei/Kriek wordt bekomen door een opeenvolgende maceratie van aardbeien en krieken. Eerst wordt er kort gemacereerd met aardbeien, waarna de aarbeienlambik wordt gebruikt als basis voor een tweede maceratie met krieken. Op deze manier wordt de bijzondere fruittoets van aardbeien gecombineerd met het ronde mondgevoel van de krieken. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On A Toast has macerated for 265 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel, in a proportion of 1 kilo of Schaarbeekse cherries per liter of lambic. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 39.70%, i.e. 397 grams of fruit per liter of bottled Schaarbeekse Kriek. 100% 3 Fonteinen lambic

These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On A Toast has macerated for 266 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel... and we added the same proportion of organic raspberries from the Ferme Framboos. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 278 grams of fruit per liter of bottled fruit lambic. 100% 3 Fonteinen lambic
Assemblage n° 67 • seizoen 17 | 18 # of bottles: 776 Brouwerij 3 Fonteinen "Speling van het Lot" (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this strawberry lambic we macerated strawberries on a 2, 000 liter foeder with young lambic. After a 1.5 months, we bottled 600 liter with a fruit intensity of 462 grams per liter of bottled Aardbei. The remaining strawberry lambic was then used as a basis for a second maceration with sour cherries. This will be subject of a later Speling van het Lot. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we barrel macerated sour cherries on a previous barrel macerated strawberry lambic (featured in the ToF IX.i). The proportion is 65% strawberries to 35% sour cherries, while the final intensity is 260 grams of fruit per liter of finished fruit lambic. The ToF's IX.iv to IX.vii follow the same principle except we played around with the sugar priming dosage, which is in this case 3 grams per liter

Oud Beersel is known for its lambiek (lambic) that is brewed according to the traditional artisan method and Domus Ad Fontes as a winemaker with the oldest vineyard in Belgium where beautiful, sparkling pure brut wines are made. bzart Kriekenlambiek Brut Nature is a sparkling pure brut quality beverage based on "Kriekenlambiek Oud Beersel" (cherry Lambic of Oud Beersel) which is a craft beer produced according to the traditional rules of the "Méthode Classique". Cherry Lambic is a Belgian spontaneous fermentation beer made of Lambic to which sour cherries are added. The used "Kriekenlambiek Oud Beersel" is traditionally brewed with real sour cherries and with Lambic Oud Beersel that matured in wooden barrels. It contains some 400 grams of sour cherries a litre which is unique in its kind. This kriekenlambiek is bottled and then the "Méthode Classique" (Classic Method) is applied during several months. This means that after adding sugar and a sparkling wine yeast, the "liqueur de tirage", this kriekenlambiek is re-fermented. Gueuze Cuvée René is one of the jewels of our brewery. With its golden colour, its sparkle and its beautiful sherry aromas, this is the queen of gueuzes. This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional! The use of a champagne bottle dates back to an uncertain time period when lambic brewers specialised in recovering empty bottles from great restaurants and other establishments where a lot of champagne was consumed. That is why we chose the most noble of bottles to hold our noblest beer
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It's a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the "best before" date! Taste carefully and you will uncover a fruity grapefruit and ginger flavour with a hint of Muscat grapes. You'll be pleasantly surprised by the wholehearted body and the sublime finish – an explosion of Germanic and Romance cultures
For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings
Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries
Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine. The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. This is soft mildness personified
Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the "best before" date! The soft, mildly sour berry taste, harmonises with the oak barrels' aromas in which Geuze Mariage Parfait has ripen. The body speaks of vanilla followed by a bitter aftertaste of cloves that becomes increasingly intense. Sublime

The lambics originate from five different brews and were all a good year old when filling the sherry barrels. Accordingly, the weighted average age upon bottling was a tad more than 24 months. 100% 3 Fonteinen. We filled these with young lambic from four different brews and some with four month-old lambic wort. The weighted average age upon bottling was 21 months. 100% 3 Fonteinen. Batch 6. Beginning of 2017, we acquired a second set of 21 Oloroso and 7 PX barrels and aged young lambic on them for another year. We lost 4 barrels along the way and we blended 12 barrels for this blend and 12 barrels for batch 5 (blend 49). 3 Fonteinen Oude Geuze Golden Blend is a blend of one-, two-, three-and at least 25% four-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. When cellared properly, 3 Fonteinen Golden Blend can be aged for several decades. Traditional lambic is living, cultural heritage rooted in the Zenne valley! Bottle fermented, unfiltered and unpasteurised
Deze specifieke (Oude Kriek) Robijn heeft niet minder dan 8 maanden gemacereerd. De finale fruitintensiteit bedraagt 333 gram krieken per liter Robijn. 100% 3 Fonteinen afkomstig van twee tonnen en twee brouw-sels. This specific (Oude Kriek) Robijn has macerated a tad more than 8 months. Final fruit intensity is 333 grams of sour cherries per litre of Robijn. 100% 3 Fonteinen, originating from two barrels and from two brews. 3 Fonteinen Robijn is the result of macerating hand-picked whole sour cherries on lambic in a toasted oak barrel, for at least four months and in a proportion of one kilogram of fruit per litre of lambic. This sour cherry lambic is then blended with more lambic to obtain a minimum intensity of 35% fruit. The kriek lambic ferments in the bottle for at least another five months, and develops into a more complex Oude Kriek. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Bottle fermented, unfiltered and unpasteurised
bottling date: 30/07/2019 Deze specifieke Aardbei/Kriek heeft een finale fruitintensiteit van 665 gram per liter, volgens een verhouding van 75% bio aardbeien van bij Ferme Framboos en 25% krieken. De maceraties gebeurden allemaal op vat. NL 3 Fonteinen Aardbei/Kriek wordt bekomen door een opeenvolgende maceratie van aardbeien en krieken. Eerst wordt er kort gemacereerd met aardbeien, waarna de aarbeienlambik wordt gebruikt als basis voor een tweede maceratie met krieken. Op deze manier wordt de bijzondere fruittoets van aardbeien gecombineerd met het ronde mondgevoel van de krieken. De resulterende fruitlambik wordt dan verder geassembleerd met jonge lambik voor de verdere vergisting in de fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. Ongefilterd en ongepasteuriseerd FR 3 Fonteinen Aardbei/Kriek est le résultat de macérations successives avec des fraises et des griottes. En premier les fraises sont macérées avec du lambic, le résultat est utilisé comme base pour une deuxième macération avec des griottes. Ainsi, l'arôme particulier des fraises est combiné avec la rondeur en bouche des griottes. Ensuite, ce lambic fruité est assemblé avec du jeune lambic et le tout est embouteille où la fermentation continue en bouteille. Du fruit naturel, sans jus, sirops ou sucres ajoutés. Seizoen 17 | 18 Blend 30 • 15/03/2018 • #588 This fruit lambic is a blend of 90% blackberry lambic and 10% Hommage lambic (75% raspberries and 25% sour cherries). After the maceration, the fruit lambic has been bottled immediately, without blending it with young lambic. The total fruit intensity is 65%, i.e. 650 grams of fruit per liter of bottled fruit lambic

These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. The name ("Zotte Kadeeën" - "Crazy Kids") refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. This fruit lambic is the result of a short maceration of organic raspberries and organic blackberries for 2, 5 months. This fruit lambic was then blended with young lambic and a final fruit intensity of 304 grams of fruit per liter of bottled Framboos Braam lambic was obtained

The name ("Zotte Kadeeën" - "Crazy Kids") refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. This plum lambic is the result of a short maceration of plums for one month. It was then blended with young lambic and a final fruit intensity of 340 grams of plums per liter of bottled plum lambic was obtained

This rhubarb lambic is the result of a maceration for 6 months and was then blended with young lambic prior to bottling. This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On A Toast has macerated for 265 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel, in a proportion of 1 kilo of Schaarbeekse cherries per liter of lambic. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 39.70%, i.e. 397 grams of fruit per liter of bottled Schaarbeekse Kriek. 100% 3 Fonteinen lambic

This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On A Toast has macerated for 266 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel... and we added the same proportion of organic raspberries from the Ferme Framboos. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 278 grams of fruit per liter of bottled fruit lambic. 100% 3 Fonteinen lambic
Assemblage n° 67 • seizoen 17 | 18 # of bottles: 776 Brouwerij 3 Fonteinen "Speling van het Lot" (Twist of Fate) is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this strawberry lambic we macerated strawberries on a 2, 000 liter foeder with young lambic. After a 1.5 months, we bottled 600 liter with a fruit intensity of 462 grams per liter of bottled Aardbei. The remaining strawberry lambic was then used as a basis for a second maceration with sour cherries. This will be subject of a later Speling van het Lot. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic

The ToF's IX.iv to IX.vii follow the same principle except we played around with the sugar priming dosage, which is in this case 3 grams per liter

This is a different version from the Experimental Draft Versions #1 and #2, as no Meerts lambic was used to lower the ABV of the blend. bzart Kriekenlambiek Brut Nature originated from collaboration between Domus Ad Fontes and the brewery 'Brouwerij Oud Beersel'. Oud Beersel is known for its lambiek (lambic) that is brewed according to the traditional artisan method and Domus Ad Fontes as a winemaker with the oldest vineyard in Belgium where beautiful, sparkling pure brut wines are made. bzart Kriekenlambiek Brut Nature is a sparkling pure brut quality beverage based on "Kriekenlambiek Oud Beersel" (cherry Lambic of Oud Beersel) which is a craft beer produced according to the traditional rules of the "Méthode Classique". Cherry Lambic is a Belgian spontaneous fermentation beer made of Lambic to which sour cherries are added. The used "Kriekenlambiek Oud Beersel" is traditionally brewed with real sour cherries and with Lambic Oud Beersel that matured in wooden barrels. It contains some 400 grams of sour cherries a litre which is unique in its kind. This kriekenlambiek is bottled and then the "Méthode Classique" (Classic Method) is applied during several months. This means that after adding sugar and a sparkling wine yeast, the "liqueur de tirage", this kriekenlambiek is re-fermented. Carbon dioxide develops and is locked in the bottle which causes the kriekenlambiek to become effervescent. Other intrinsical steps, such as the "remuage" (riddling) and the "dégorgement" (disgorging) follow, which eventually lead to a sparkling, refined beverage. It is typical for bzart Kriekenlambiek that no "liqueur d'expédition" (shipment liquor) is applied before adding the cork. This beverage also combines the best of two worlds, the festive character of sparkling wine and the full flavour of artisan brewed kriekenlambiek. Traditionally it is said that women prefer a glass of bubbly as an aperitif while most men rather have a quality beer. In some restaurants they have been searching for years for a beverage that will please both women and men. bzart Kriekenlambiek Brut Nature ends this search beautifully and it is probably the first and only sparkling kriekenlambiek beer in the world. This sparkling kriekenlambiek brut nature has an alcohol percentage of 8% volume and is poured from bottles that contain 75cl. The taste and the aftertaste are quite "fraîcheur" (fresh) which make you remember the real 'kriekentaart' (sour cherry pie) of the good old days. bzart Kriekenlambiek is a delicious aperitif and perfect to pair with dark chocolate, blue-veined cheese, game and all preparations with almonds. bzart Kriekenlambiek is already mentioned on the menu of renowned restaurants and is distributed by famous beverage merchants

Gueuze Cuvée René is one of the jewels of our brewery. With its golden colour, its sparkle and its beautiful sherry aromas, this is the queen of gueuzes. This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional! The use of a champagne bottle dates back to an uncertain time period when lambic brewers specialised in recovering empty bottles from great restaurants and other establishments where a lot of champagne was consumed. That is why we chose the most noble of bottles to hold our noblest beer
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It's a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the "best before" date! For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings
Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries
Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine. The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the "best before" date! The soft, mildly sour berry taste, harmonises with the oak barrels' aromas in which Geuze Mariage Parfait has ripen. 3 Fonteinen Oude Geuze Golden Blend is a blend of one-, two-, three-and at least 25% four-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. When cellared properly, 3 Fonteinen Golden Blend can be aged for several decades. Deze specifieke (Oude Kriek) Robijn heeft niet minder dan 8 maanden gemacereerd. This sour cherry lambic is then blended with more lambic to obtain a minimum intensity of 35% fruit. The kriek lambic ferments in the bottle for at least another five months, and develops into a more complex Oude Kriek. bottling date: 30/07/2019 Deze specifieke Aardbei/Kriek heeft een finale fruitintensiteit van 665 gram per liter, volgens een verhouding van 75% bio aardbeien van bij Ferme Framboos en 25% krieken. De maceraties gebeurden allemaal op vat. NL 3 Fonteinen Aardbei/Kriek wordt bekomen door een opeenvolgende maceratie van aardbeien en krieken. Eerst wordt er kort gemacereerd met aardbeien, waarna de aarbeienlambik wordt gebruikt als basis voor een tweede maceratie met krieken. Op deze manier wordt de bijzondere fruittoets van aardbeien gecombineerd met het ronde mondgevoel van de krieken. De resulterende fruitlambik wordt dan verder geassembleerd met jonge lambik voor de verdere vergisting in de fles. Natuurlijk fruit, zonder toevoeging van sappen, siropen, of suikers. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. The name ("Zotte Kadeeën" - "Crazy Kids") refers to the abundant creativity of our youthful, passionate team, that likes to explore within the traditional lambic boundaries. This rhubarb lambic is the result of a maceration for 6 months and was then blended with young lambic prior to bottling. This Schaarbeekse On A Toast has macerated for 265 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel, in a proportion of 1 kilo of Schaarbeekse cherries per liter of lambic. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 39.70%, i.e. 397 grams of fruit per liter of bottled Schaarbeekse Kriek. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this strawberry lambic we macerated strawberries on a 2, 000 liter foeder with young lambic. After a 1.5 months, we bottled 600 liter with a fruit intensity of 462 grams per liter of bottled Aardbei. The remaining strawberry lambic was then used as a basis for a second maceration with sour cherries. This will be subject of a later Speling van het Lot. 100% 3 Fonteinen lambic

For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic

The proportion is 65% strawberries to 35% sour cherries, while the final intensity is 260 grams of fruit per liter of finished fruit lambic. The ToF's IX.iv to IX.vii follow the same principle except we played around with the sugar priming dosage, which is in this case 3 grams per liter

This is the third edition of Today. It is a blend of three, two and one year old spontaneously fermented beers. The worts were made in December 2016, January 2018 and March 2019 using a traditional turbid mash method. A true Geuze. A blend of 1, 2, and 3 year-old lambic unfiltered and unpasteurized and aged in the bottle for at least 6 months after blending. Continued fermentation in the bottle give this Geuze its famous champagne-like spritziness. The lambic that goes into it is brewed only with 60% barley malt, 40% unmalted wheat, aged hops, and water, spontaneously fermented by wild yeasts, and matured in oak casks. 3 Fonteinen Oude Geuze is a blend of one-, two-, and three-year old lambics. 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. The kriek lambic ferments in the bottle for at least another six months and develops into an intense wine-like fruit lambic. This particular Framboos has macerated for 5 months. The final fruit intensity is 37% (so 370 grams of fruit per liter of finished Framboos). Oud Beersel is known for its lambiek (lambic) that is brewed according to the traditional artisan method and Domus Ad Fontes as a winemaker with the oldest vineyard in Belgium where beautiful, sparkling pure brut wines are made. bzart Kriekenlambiek Brut Nature is a sparkling pure brut quality beverage based on "Kriekenlambiek Oud Beersel" (cherry Lambic of Oud Beersel) which is a craft beer produced according to the traditional rules of the "Méthode Classique". Cherry Lambic is a Belgian spontaneous fermentation beer made of Lambic to which sour cherries are added. The used "Kriekenlambiek Oud Beersel" is traditionally brewed with real sour cherries and with Lambic Oud Beersel that matured in wooden barrels. It contains some 400 grams of sour cherries a litre which is unique in its kind. This kriekenlambiek is bottled and then the "Méthode Classique" (Classic Method) is applied during several months. This means that after adding sugar and a sparkling wine yeast, the "liqueur de tirage", this kriekenlambiek is re-fermented. Carbon dioxide develops and is locked in the bottle which causes the kriekenlambiek to become effervescent. Other intrinsical steps, such as the "remuage" (riddling) and the "dégorgement" (disgorging) follow, which eventually lead to a sparkling, refined beverage. It is typical for bzart Kriekenlambiek that no "liqueur d'expédition" (shipment liquor) is applied before adding the cork. This beverage also combines the best of two worlds, the festive character of sparkling wine and the full flavour of artisan brewed kriekenlambiek. Traditionally it is said that women prefer a glass of bubbly as an aperitif while most men rather have a quality beer. In some restaurants they have been searching for years for a beverage that will please both women and men. bzart Kriekenlambiek Brut Nature ends this search beautifully and it is probably the first and only sparkling kriekenlambiek beer in the world. This sparkling kriekenlambiek brut nature has an alcohol percentage of 8% volume and is poured from bottles that contain 75cl. Gueuze Cuvée René is one of the jewels of our brewery. With its golden colour, its sparkle and its beautiful sherry aromas, this is the queen of gueuzes. This old gueuze is a blend of old and young lambic matured in large oak barrels called foudres. It is then bottled in a beautiful champagne bottle where a second fermentation takes place. After 6 months, the gueuze obtains a golden colour and is slightly carbonated and tart. But kept in a cellar for a few years, it becomes truly exceptional! The use of a champagne bottle dates back to an uncertain time period when lambic brewers specialised in recovering empty bottles from great restaurants and other establishments where a lot of champagne was consumed. That is why we chose the most noble of bottles to hold our noblest beer
Oude Geuze Boon is a monument of taste with an alcohol content of 7%. It's a magnificent blend of 90% mild 18 month-old lambic, 5% strong 3 year-old beer and 5% very young lambic, which provides fermentable sugars and wild yeasts. All our beers are aged in oak casks, mixed in a vessel of 25,000 litres and chilled. Before bottling, we bring the mix to fermentation temperature. The bottles are then placed in an air-conditioned room, which leads to a secondary fermentation in the bottle. This is when the lambic becomes gueuze. After several months of aging in the bottle, the gueuze develops its delicate flavour. Want to know the bottling date? Simply subtract 20 years from the "best before" date! For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. We then clarify, filter and bottle it. The cherries and young lambic create a red beer that is both natural and fresh, with an absolutely unforgettable sweet and sour taste. This is kriek as it should be, with nothing but real cherries and lambic. There is no place for artificial colourings or flavourings
Raspberry lambic was once a rarity and only produced for a few weeks during the summer. Frank Boon was the first brewer to again prepare a raspberry lambic in the summer of 1976. More than 300 grams per litre of fresh raspberries give Framboise Boon a fresh fruity taste. The young lambic supports the flavour. But this is very much about raspberries, not the lambic. Of course we do not use artificial flavourings, only real raspberries
Kriek Boon Mariage Parfait consists of 1 year-old heavy lambic flavoured with overripe cherries, 400 grams per litre. Longer aging in small oak barrels gives it its special flavour. The lambic is bottled and stored in an air-conditioned room for six months of secondary fermentation. Kriek Mariage Parfait has an alcohol volume of 8%. It keeps for a minimum 20 years, and is ready to drink after about 2 years in the bottle. This is perfection in kriek beers. Try it and admit that it surpasses the best wine. The casks give this beer its fine oaky flavour with hints of vanilla and cloves. It boasts a wide mouth with a warm body and roundness reminiscent of dried cherries and wild tastes. Boon Geuze Mariage Parfait has an alcohol content of 8%. It consists of 95% mild lambic, aged at least three years and specially reserved for this purpose, and 5% young lambic. The latter provides the fermentable sugars and wild yeasts. After mixing in a vessel of 25,000 litres, the wort (unfermented mixture) is filtered and chilled. If we are bottling, we bring it back to fermentation temperature. The bottles are placed in a climate-controlled space for the secondary fermentation. This is followed by maturing at low temperature for at least 6 months. Want to know the bottling date? Simply subtract 20 years from the "best before" date! The soft, mildly sour berry taste, harmonises with the oak barrels' aromas in which Geuze Mariage Parfait has ripen. 3 Fonteinen Oude Geuze Golden Blend is a blend of one-, two-, three-and at least 25% four-year old lambics. Spontaneous fermentation, patient maturation in oak barrels, and continued evolution in the bottle result in a distinctively complex beer. No two bottlings are alike, as there are multiple variables in the blending process, a variety of barrel sizes and shapes, differences in aged lambic proportions, etc. When cellared properly, 3 Fonteinen Golden Blend can be aged for several decades. De maceraties gebeurden allemaal op vat. NL 3 Fonteinen Aardbei/Kriek wordt bekomen door een opeenvolgende maceratie van aardbeien en krieken. Eerst wordt er kort gemacereerd met aardbeien, waarna de aarbeienlambik wordt gebruikt als basis voor een tweede maceratie met krieken. Op deze manier wordt de bijzondere fruittoets van aardbeien gecombineerd met het ronde mondgevoel van de krieken. "Twist of Fate" is a series of small batch experimental brews, barrel maturations, fruit macerations and/or blends. It allows us to enter the wild lambik playground in our own way. The 7th iteration features a range of fruit macerations on freshly emptied Bordeaux barrels from Châ¬teau Pabus. These high quality French oak barrels were used for a unique integrated vinification technique, including grape peel maceration in the barrel itself. The name ("Zotte Kadeeën" - "Crazy Kids") refers to the abundant creativity of our youthful, pas¬sionate team, that likes to explore within the traditional lambic boundaries. Seizoen 17 | 18 Blend 30 • 15/03/2018 • #588 This fruit lambic is a blend of 90% blackberry lambic and 10% Hommage lambic (75% raspberries and 25% sour cherries). This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. These noblest of sour cherries have been sourced in the gardens of and hand-picked by more than 50 families around Brussels. This Schaarbeekse On A Toast has macerated for 265 days (over 8.5 months) on a fresh 1, 000 liter medium toasted French oak barrel, in a proportion of 1 kilo of Schaarbeekse cherries per liter of lambic. After the maceration, the fruit lambic was blended with young lambic for a continued fermentation in the bottle. The total fruit intensity is 39.70%, i.e. 397 grams of fruit per liter of bottled Schaarbeekse Kriek. 100% 3 Fonteinen lambic

This 8th version features the maceration of Schaarbeekse cherries on charred/toasted barrels. This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this strawberry lambic we macerated strawberries on a 2, 000 liter foeder with young lambic. After a 1.5 months, we bottled 600 liter with a fruit intensity of 462 grams per liter of bottled Aardbei. The remaining strawberry lambic was then used as a basis for a second maceration with sour cherries. This will be subject of a later Speling van het Lot. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we macerated strawberries (30%) and cherries (70%) separately on two different oak barrels for a couple of few weeks. The fruit lambics were then blended and put on a 400 liter oak barrel for another 6 months of ageing and bottled afterwards. The fruit intensity is 500 grams of fruit per liter of bottled Bio Aardbei + Kriek. 100% 3 Fonteinen lambic

This 9th version features a range of strawberry maceration iterations aiming at balancing the intense fruitiness of strawberries with the subtleties of traditional lambic while minimising the unpleasant phenolic characteristics of the small pits. For this fruit lambic we barrel macerated sour cherries on a previous barrel macerated strawberry lambic (featured in the ToF IX.i). The proportion is 65% strawberries to 35% sour cherries, while the final intensity is 260 grams of fruit per liter of finished fruit lambic. The ToF's IX.iv to IX.vii follow the same principle except we played around with the sugar priming dosage, which is in this case 3 grams per liter

This 11th version features a range of plum (-like) fruit macerations. About 60 years ago, there were more than 200 ancient plum varieties in and around Belgium, now almost extinct. The ambition is to track down and experiment with such old local varieties and have them grown again with local farmers and enthusiasts. For this plum lambic, we macerated stoned Reine Claude D'Oullins plums for seven months on an oak barrel. The final fruit intensity is 526 grams of plums per liter of finished plum lambic. This is the third edition of Today. It is a blend of three, two and one year old spontaneously fermented beers. The worts were made in December 2016, January 2018 and March 2019 using a traditional turbid mash method. They were each left in our coolship overnight to be inoculated with wild yeast and bacteria, before being fermented in oak. This blend conditioned in bottle for six months before release

Bottle only - Produced with Method Ancestral by pressing whole bunches of grapes to extract both the juices and indigenous yeasts in the grape's skins. Fermented in steel, then bottled to undergo a secondary fermentation in the bottle to create a gently sparkling wine. Aged "sur lie" which means the yeasts stay in the bottle, giving an opaque appearance. Salmon pink in colour, strawberries and nectarine on the nose. Light sparkling palate with notes of red berries, ripe peach, pear and a toasty character on the finish
