The meat that determines the quality of shabu-shabu. All of it is processed according to the original standards of shabu-shabu warm vegetables, utilizing years of experience. Only meat that meets our strict production management and internal standards is used. To ensure you can enjoy it at its freshest, the meat is carefully cut one piece at a time in the store. It is served at a thickness that makes shabu-shabu incredibly delicious.
We discuss with farmers to select and procure vegetables that pair well with shabu-shabu. Some of these vegetables have been developed specifically for shabu-shabu hot vegetables. Additionally, we conduct a 'production area relay' without specifying a particular region, ensuring that we procure the most delicious vegetables available at that time.
We added supreme white soy sauce that enhances the sweetness of the ingredients to a dashi made from three types of seafood, along with hand-crafted bonito flakes made by skilled artisans. This is a dashi that allows you to enjoy the natural umami of vegetables and the flavor of bonito at the same time.
A flavorful broth enriched with the umami of beef tail and Wagyu, simmered slowly with aromatic vegetables to bring out richness and aroma. Adding some scallions to taste enhances the fragrance and sweetness even further.
A refined flavor with a rich taste amidst a mellow sweetness. It harmonizes with the umami of the ingredients as you dip them.
A clear broth that enhances the natural flavors of the ingredients with abundant umami. It pairs exceptionally well with ponzu and sesame sauce.
Using organic soy milk made by a traditional method of soaking whole soybeans thoroughly and squeezing them. By adding bonito and kelp broth, it becomes rich enough to create yuba while still being a mild broth suitable for shabu-shabu.
A flavorful and spicy taste made with a base of chicken or seafood soup, adding chili peppers, gochujang, and more.
The rich soup that enhances the flavor of the tail pairs perfectly with beef offal.
The deep umami of red sea bream is combined with 'Umami Seaweed Salt' from Setouchi, and elegantly finished with fragrant Hokkaido Rishiri Kombu and grilled bonito flakes from Yaizu.
This dashi combines grilled flying fish, bonito flakes, and dried sardines with domestic yuzu, creating a refined and aromatic deep flavor.
