This is the highest peak full-course meal in which we pour all of our passion, named "Harmony," a collaboration of supreme ingredients and matured wines created through 35 years of study. The most distinctive feature of the restaurant is its "made-to-order" service, in which ingredients are prepared in accordance with the customer's reservation. Chef Ishii uses the best natural ingredients at the time, such as purple sea urchin from Oma, Ezo abalone, and chateaubriand, and sublimates them into about 10 dishes over the course of 35 years of cooking, including "Nanaya duck," which is aged for one month and grilled over charcoal for four hours, and "black abalone" steamed for five hours in Hana-hato sake yeast in Hiroshima, using time as the seasoning.
