This is Goto Jidori Shimazasanami. The head chef has decided to serve it simply as teppanyaki (dinner only). It can be eaten raw, but since preferences vary, please enjoy it at your preferred level of doneness. There is Goto's Yakame salt available on the table, and we also have grated ponzu sauce prepared.
