Grapes grown in such an environment develop deep roots, allowing them to absorb minerals and other components from the soil, which are then reflected in the fruit. This is umeshu (plum wine) made with Kojiro Ume, which was known as 'Blue Diamond' during the Taisho and Showa eras, before the Nanko Ume became mainstream in Wakayama Prefecture. Compared to Nanko Ume, the flesh is firmer, allowing more plum extract to seep out, resulting in a refreshing aftertaste that lets you enjoy the original deliciousness of the plum.
