A ramen restaurant with a ryotei-style atmosphere I've been curious about this popular restaurant for a long time, but I've never been able to go there. When I passed through the curtain, there were two people waiting in front of the entrance (థ公థ.) The entrance was littered with customers' shoes since shoes are not allowed to be walked on! The soup was light, but surprisingly thick... The noodles were firm and straight, and there were a few people who ordered replacement balls. There were many female customers. I would have liked to have pepper, vinegar, and other seasonings, but they don't seem to have them. Personally, I would like to try Kyoto's black shichimi, which I think would be a good match! I would definitely like to visit again.

Duck Hachi-Re-Men (Duck Ramen) / Duck Miso-Gohan (Rice with Duck Miso) I finally went to a restaurant that I had been longing to visit for a long time. It is a hideout-like restaurant in a residential area. After passing through the curtain, you take off your shoes and step onto the tatami mats. I sat down at the counter and ordered the Kamo Hachirimen without hesitation. I couldn't wait to try it, and although I felt like an adult, I was anxious from start to finish. Then, the long-awaited ramen appeared. I started with the soup with a sense of excitement. The soup stock was like that of a kappo restaurant. This is the kind of soup that makes you drink it. The noodles are crispy and have a texture closer to soba noodles than ramen noodles. The fu absorbs a lot of the broth, so when you put it in your mouth, it spreads out and makes you happy. The chopped sansho (Japanese pepper) adds a nice accent. Unlike powdered sansho, the aroma of the sansho naturally fades away as soon as the aroma starts to waft. The aroma is not left in the air, so it has an intonation that is somewhat fresh. The accompanying dishes are also very tasty. You can feel that a lot of time and effort has been put into this dish. Then, we moved on to my favorite dish, duck! Rare duck chashu. When you put it on top of ramen, it is cooked slowly. It is so delicious. Even though it is rare, there is no smell or habit at all, just pure delicious duck. The more you bite into it, the more the flavor comes over you. I was in agony every time I ate it. It was a great decision to add the duck. I want to eat it forever. As you can see, I was too engrossed in eating to take a picture of the duck miso rice (^O^), but the tender duck and the sweetness of the red miso paste match each other and the filling just keeps the rice going. The saltiness of the ramen and the sweetness of the miso also accelerate each other. You may be concerned about the fatty appearance of the ramen, but it is not greasy at all, and the ramen is full of soup stock and umami. I was impressed by the calculated balance and deliciousness. I wish they were closer. I will definitely go back to eat there.

~Kuuan~ (name of a koto composition) Located in Takeji-cho, Midori-ku Duck ramen restaurant. Food log 3.71✴️ There is usually always a long line. You have to take off your shoes. It is the middle of the rainy season. It's raining outside the window. The maple leaves match the raindrops on the windowpane. The overall atmosphere does not look like a ramen restaurant. It looks more like a Japanese restaurant in Kyoto✨. The food is brought in on a nice tray and bowl, and comes with an appetizer list that looks like a red seal 🙂. Visuals that show quite a bit of attention to detail ✨. The appetizers were beautifully lined up, elegant and delicious. My son had Kamo Hachirimen 860 yen For me Umeyoshi Ramen 890 yen ↑Ume paste comes with the ramen and you dissolve it in the ramen. Plum paste is a must for plum lovers! People who come here often often come here to have more duck meat. I didn't. Regret 💦. I had the noodles and the duck meat was so delicious that my child took one piece, The duck meat was so delicious that my kids took one piece 🤣Next time I come back, I'll add more duck 🤣❗️ I really liked the look and taste of this dish. Simple and light. I never get tired of eating it. The fu in it was also unusual. The kids finished it faster than me. Chopsticks were going crazy 🥢🍜. Thanks for the treat ✨✨ Kuan 052-622-9888 122 Takeji-cho, Midori-ku, Nagoya, Aichi, Japan 11:30-14:00 18:00-21:00 Closed on Thursdays Closed on the 2nd and 3rd Wednesday of the month Also closed the night before a regular holiday.
