Generally, sake undergoes a heating sterilization process called 'hiire', but 'namazake' is completely unpasteurized. Compared to regular sake that has undergone hiire, namazake offers a fresh and vibrant taste. However, namazake deteriorates in quality quickly and is sensitive to temperature changes, which is why it is not widely available in the market. Our store has a large refrigerator in Tokyo, allowing us to store sake in the best condition, directly from the brewery. Therefore, you can always enjoy 'namazake', which is usually difficult to handle. For more information about the refrigerator, please see here. → http://kurand.jp/760/
