The suppon is carefully processed over a long period of time and served as sashimi, deep-fried, or in a hot pot. After removing the thin skin, the shell and meat are simmered in kelp broth and sake for three hours to make a thick soup, which is then served in Shoben Tango's special soy sauce-based mixed broth.
