A dish harmonizing the aroma of charcoal, the deliciousness of eel, and the accent of condiments. Ueno's hitsumabushi is a dish where you can fully enjoy the flavor of eel. The eel is grilled to a crispy exterior while remaining tender and juicy on the inside. The special sauce clings perfectly, stimulating your appetite. As a unique way to enjoy hitsumabushi, you can first taste it as is, and then add condiments or broth to change the flavor. The rich variations in taste overturn the conventional perception of eel.
The live eel, freshly sourced every morning, is grilled in the Kyoto style over charcoal. Since the eel is grilled after you place your order, it may take a little time. We use Koshihikari rice from Shiga Prefecture. From 1,800 yen.
