This month's curry is strawberry curry. A fresh and mild curry that brings spring ahead of time. The tanginess of strawberries and tomatoes is blended with urad beans, lentils, and coconut to create a creamy flamingo pink roux, adorned with small strawberry flowers. Hidden within the turmeric rice are dill and marinated strawberries. The balsamic sauce, resembling chocolate, enhances the flavor of the strawberries with its acidity.
