To enhance the natural sweetness and umami of the wheat flour, we use our original kansui and allow the noodles to mature to bring out their firm texture, providing them to our customers in the best condition. Additionally, our pride lies in our thin noodles, which are made from carefully selected high-quality flour using the finest bread wheat, characterized by a refined and subtly sweet flavor. The thick noodles are uniquely blended from domestically produced wheat, maximizing the chewy texture, smoothness, and umami. A rich yet refreshing special tonkotsu soup. Deep flavor and umami simmered for about 10 hours. The noodles are homemade, allowing you to fully enjoy the aroma of wheat!
Using a specially crafted chili oil and roasted sesame unique to the restaurant, it has a wonderful aroma that stimulates the appetite! It is a recommended dish not only for the cold winter months but also for the hot summer season.
※Includes rice for '955 yen'. An impactful dish with chunky meat and a yolk on top. The meat is simmered for 2-3 hours to absorb the flavors and become tender. Adding garlic as a topping and mixing it well with the noodles enhances the richness and makes it even more delicious. Don't forget to enjoy the leftover broth with some rice at the end!
