To enhance the natural sweetness and umami of the wheat flour, we use our original kansui and allow the noodles to mature to bring out their firm texture, providing them to our customers in the best condition. Additionally, our pride lies in our thin noodles, which are made from carefully selected high-quality flour using the finest bread wheat, characterized by a refined and subtly sweet flavor. The thick noodles are uniquely blended from domestically produced wheat, maximizing the chewy texture, smoothness, and umami.
