This [Finca El Caril Echesero] is a blend of red wine made from 40% Syrah, 30% Petit Verdot, 20% Tempranillo, and 10% Cabernet Sauvignon, harvested from high-altitude vineyards at an elevation of 700m. The vines are 30 years old and the soil is clay mixed with silt. The grapes are carefully hand-picked. They are soaked for 15 days at 10°C before fermentation in stainless steel tanks. Fermentation then begins, with alcoholic fermentation and soaking for 14 days at 25-27°C, followed by malolactic fermentation. The wine is then transferred to 300L French oak barrels for aging for 12 months. This full-bodied, rich red wine expresses the terroir of Manchuela while blending international varieties with indigenous Spanish varieties.
