Kumamoto specialty horse meat is simmered sweet and spicy with red sake and mixed into rice.
It is said that during the Bunroku and Keicho campaigns, Kato Kiyomasa, the lord of Kumamoto Castle, had his supply lines cut when he was dispatched to the Korean Peninsula, leading to a shortage of food. As a last resort, he began to eat military horses, and after returning home, he spread this practice in Kumamoto, Higo. Horse meat is also known as a medicinal dish, being low in calories and high in protein, and is highly recommended as a beauty food, especially for women.
