This is a tender and finely textured red meat, similar to filet. (You can order in increments of 50g starting from 100g.) You can enjoy the rich flavor of the red meat. The eye of knuckle is available at about a quarter of the price of sirloin or filet even for A-5 grade Kobe beef, and it offers exquisite taste. Please enjoy it with Himalayan pink rock salt that enhances the flavor of the meat. If you have a preferred level of doneness, please let us know. The steak will take about 30 minutes to cook, so please place your order in advance.

Refreshing, inspired by tongue salt
By using the rare cut Hiwachi, which weighs about 3 kg from a whole Kobe beef, we have achieved ultimate deliciousness. This is a very simple dish where aromatic vegetables are sautéed (mirepoix) and then simmered with red wine, but it is one of the chef's specialties that you must try at least once.
I believe the sautéed parts of the foie gras are delicious. By slicing and sautéing each piece to create a mille-feuille, I think it can be enjoyed even more.

This brown rice is made from a variety called Hinohikari, grown by Nozaki, who cultivates rice organically and without pesticides in Fushimi, Kyoto. Red core daikon produced by Mr. Nishio in Nara. It has a vibrant appearance and a crunchy texture. It is less spicy than regular daikon and is suitable for raw consumption with a hint of sweetness and slight bitterness, so we use it in salads at our store.
The Chinese cabbage made by Mr. Hirobuchi from Nara has an excellent sweetness and crunch! At our store, we serve this Chinese cabbage, which is rich in vitamins and minerals, as ingredients for stews and pasta in our organic brown rice balanced set meal!
The carrots grown by Mr. Hirofuchi are organically cultivated, allowing for efficient intake of beta-carotene by eating them with the skin. They are served in salads and stews. Additionally, the leaves can be sprinkled on pasta like parsley or used in bouquet garni.
Mr. Tsunoda's snap peas have a crunchy texture and the sweetness and texture are excellent. You can quickly boil them and enjoy them as is in salads or with bagna càuda. They can only be eaten for about two weeks in a year.
Kobe beef is characterized by its difficulty in raising and the small amount of meat produced, as it has maintained its purebred status without crossbreeding with foreign cattle, making it not commonly available in general distribution. At our restaurant, we check the taste and tenderness of all the steaks we serve. A-5 grade Kobe beef has a moderate marbling even in the rump section, allowing meat lovers to enjoy the deliciousness of its red meat. The aroma of Kobe beef when grilled is distinct. We invite you to try it at least once.

We deliver wines from wineries that are passionate about winemaking at low prices. Wines made from organically grown grapes are free from pesticide contamination. Produced in the Languedoc-Roussillon region. The grapes (Grenache) are carefully hand-picked one bunch at a time in a small village in the Roussillon area of southern France. This is a new type of Tuscan wine blended from organically grown Cabernet Sauvignon and Sangiovese, with a limited harvest. A powerful wine that stands up well when paired with meat.
