A Shinshu mountain stream cuisine course that allows you to enjoy a course meal of sashimi of rockfish and Shinshu salmon grown in the clear underground water of the Alps, grated whole fresh wasabi from the Azumino wasabida, and Shinshu soba noodles.
A course meal in which you can eat whole grated fresh wasabi from the Azumino wasabi fields grown in the subterranean water of the Alps. This course includes a bowl of rice topped with fresh wasabi and tempura of leaf wasabi, which are local specialties, and other Azumino specialties produced by the famous water of Azumino, Shinshu.

Founded over 110 years ago. This dish is made by marinating duck in our secret sauce, which is based on soy sauce from Marusho Brewing, a representative brewery of Shinshu, and then grilling it. It features tender and flavorful duck meat paired with grilled green onions and shredded white onions, making it a popular duck dish on our menu.
A pure rice sake that has a rich and mellow flavor, yet an exquisite crisp finish. A confident creation from the brewery that pairs well with dishes ranging from soba to sashimi.
When you take a sip, it is refreshingly pleasant, with a perfectly straight spiciness. A light and easy-to-drink hot sake is recommended.
A cold-brewed junmai sake carefully crafted during the severe cold of winter in Saku, Nagano, using only Asama groundwater and Nagano rice. It has a rich and full-bodied flavor, with the deliciousness of the rice spreading pleasantly in the mouth.

This is a soba shochu made with 75% soba flour from the famous soba-producing region of Kiso and 25% rice, blended in a stylish 'two-eight' ratio. The shochu, which has been aged and stored for three years by the brewery, offers a refreshing and dry taste with a strong aroma of soba.
This barley shochu is carefully crafted using rice koji and barley, made with yellow koji mold unique to sake breweries, and distilled under reduced pressure. It features a calm aroma of barley and a light, refreshing taste.
