In Shintoku Town, Tokachi, Hokkaido, we use whey from the cheese workshop called Tomobataru Gakusha to suppress the fishy smell of the fish. By using whey, the fish flesh becomes plump and tender, reducing the fishy odor. This is what we call 'Lactic Acid Bacteria Dried Fish.'
