This dish combines two types of soy sauce, with the main one being soy sauce from Wakayama Prefecture. It includes a soy sauce-based sauce with a dashi made from mussels, porcini mushrooms, beef, and more. The soup contains seafood such as purebred Nagoya Cochin chicken, Aomori Shamo chicken, Amakusa Daioh, Kuroiwa Jidori chicken, asari clams, and natural Rausu kelp, along with vegetables. Homemade noodles are also included. It is served with Italian black truffle oil, balsamic truffle cream, a cream sauce made from morel and porcini mushrooms, and fig compote.
Our shop is the only place in the world where you can eat Aomori Shamorokku's flavored egg. The rich and flavorful umami taste is clearly different from other eggs. It may be sold out due to its rarity.

Accompanied by Saga Prefecture's finest salt, horseradish, and Pinot Noir mustard. We offer a soup base made with dried flower bonito, with the dashi extracted just before serving.

We cook special A Yamagata Henuki rice from Yamagata prefecture, delivered directly from contracted farmers, in an earthen pot, and adjust the moisture by allowing it to breathe in a wooden rice container before serving.
We recommend eating the king of vegetables, kale salad, together with ramen. Please enjoy it with homemade carrot dressing.
