Appetizers using pesticide-free vegetables from Tamba City Island and fresh seasonal fish from the central wholesale market, The main course is a steak of specially selected Japanese black rump beef. Phillipslar Origin: France Jura > Arlay Variety: Chardonnay 50% Trousseau 50% (ALc 16.5%) The oldest producer in Europe with a history of 1,000 years. Chardonnay and Savagnin, harvested late to increase sugar content, are directly pressed to obtain the must. It is passed through a coarse filter to remove yeast and stored in refrigeration. Their own marc, aged in barrels for 7 years, is added to the must, which is then aged in old barriques for an additional 3 years before bottling. Glass (50ml)
