The history of Kujo leeks is surprisingly old, having been cultivated since the Nara period. They were mainly grown in Kujo, located in the south of Kyoto, hence the name 'Kujo Leeks.' During the cold winter months, a viscous substance forms in the hollow parts, which is very delicious and pairs perfectly with fish. First, enjoy the fish and rice with the leeks as they are, and then pour some broth over them for a second way to savor this dish.
The cod roe caught in the northern sea is seasoned with a kick in Kyushu and was reborn after meeting dashi in Kyoto. It is lightly grilled and placed whole on hot rice, paired with crunchy mizuna.

Manganji pepper is a somewhat mysterious pepper, larger and thicker than other peppers, and very substantial. The flesh is relatively soft, and it has fewer seeds compared to others (such as shishito and Fushimi peppers), making it recommended for those who say, 'I don't like peppers.'
In fact, the origin of water greens is Kyoto. Although they are now cultivated nationwide, outside of Kansai, they are sometimes called Kyoto greens, but the original is from Kyoto. We made pasta with these Kyoto water greens and sea bream from Setouchi.
