This is the basic soba made with 20% wheat flour and 80% buckwheat flour. If no specific type of soba is requested, all servings will be Nihachi Soba. Enjoy the excellent texture and chewiness, along with its intense firmness.

It looks black and thick, with a robust flavor that is rich in wild taste. Since the buckwheat husks are also ground in, it is soba that allows you to fully enjoy the original flavor of buckwheat.
Unlike typical roasted sesame oil, it is almost transparent and does not have the distinctive aroma of sesame oil. It is a pure sesame oil that is committed to quality and safety, extracted without chemical agents, using carefully selected raw materials that are pressed raw under high pressure without roasting. The deep flavor, concentrated with the essence of sesame, enhances the natural taste of the ingredients.
Cottonseed oil, extracted from cotton seeds, is known as the 'king of salad oils.' It has a mild flavor and is rich in vitamin E, which is said to prevent cellular aging and may be effective in cancer prevention. Additionally, it contains twice the amount of B-sitosterol compared to other oils, which helps prevent the absorption of bad cholesterol that can lead to arteriosclerosis and high blood sugar.
