These mountains hold memories of climbing for the citizens, serving as an important landscape of their hometown. We have developed a special katsudon menu that collaborates with these familiar mountains and the local 'Kansho Pork.' The 'Kansho Pork,' produced by Mr. Gyotoku, who runs a pig farming business in Nojiri Town, Kobayashi City, is already used as an ingredient at 'Kobayashi Ajisai' located in the roadside station Yu-Pal Nojiri, known for its tender meat and sweet fat. Mr. Gyotoku originally came from a family of pig farmers, but after leaving Nojiri Town to experience other professions, he returned to his hometown and took over the pig farming business from his father. Chef Ito, who belongs to 'Kobayashi Ajisai,' has a past relationship with Mr. Gyotoku; they were in the same baseball club during elementary school, with a senior-junior relationship. The nostalgic episode of climbing the memorable Kirishima Mountains together during practice led to the creation of the 'Kirishima Mountains Fute Mute Katsudon.'

In the local dialect used in this area, 'Nishimoro' means 'The curry at this roadside station is delicious!' It embodies our motivation to encourage ourselves with the thought, 'We will make this a shop where many customers come!' and is reflected in the name of this menu item.

120 grams of thigh meat (the photo shows a large size, priced at 1,280 yen). Comes with cold tofu, pickles, rice, and miso soup. The tartare sauce is made using pickles from Kobayashi and yogurt from Kato Farm. The nanban vinegar is made with plenty of juice from Hyuganatsu and oranges from Kyushu, resulting in a refreshing and elegant flavor.
160 grams of thigh meat, cold tofu, pickles, rice, and miso soup. The small bowl of tofu uses the local 'Higashi Tofu' rustic tofu. The carrot dressing and pickles are handmade with care by our female staff.
