こばやし 味彩

These mountains hold memories of climbing for the citizens, serving as an important landscape of their hometown. We have developed a special katsudon menu that collaborates with these familiar mountains and the local 'Kansho Pork.' The 'Kansho Pork,' produced by Mr. Gyotoku, who runs a pig farming business in Nojiri Town, Kobayashi City, is already used as an ingredient at 'Kobayashi Ajisai' located in the roadside station Yu-Pal Nojiri, known for its tender meat and sweet fat. Mr. Gyotoku originally came from a family of pig farmers, but after leaving Nojiri Town to experience other professions, he returned to his hometown and took over the pig farming business from his father. Chef Ito, who belongs to 'Kobayashi Ajisai,' has a past relationship with Mr. Gyotoku; they were in the same baseball club during elementary school, with a senior-junior relationship. The nostalgic episode of climbing the memorable Kirishima Mountains together during practice led to the creation of the 'Kirishima Mountains Fute Mute Katsudon.'

<Description>The pork loin used for the tonkatsu is from the local Miyazaki brand pork, specifically the 'Kansho Pork' from Kobayashi and Nojiri. According to the producer, Mr. Gyotoku, during the period when the pork fat is being developed, they add 'sweet potato (kansho)' to the feed. 'Kansho Pork' is characterized by its tenderness and the sweet melting fat. The 500g portion is 5cm tall and thick, which is also the origin of the name 'Kirishima Mountain Fute Mute Katsu Don.' 'Fute Mute' means very thick or large in the Nishimoro dialect. In conversation, it is often elongated as 'fute mute~.' The 500g and 300g portions are prepared using low-temperature cooking, and are available in limited quantities. The 120g portion is fried from raw, so it has a different flavor compared to the 500g and 300g. Karakunidake (1,700m elevation) (Kansho Pork 500g) ... 3,280 yen (tax included, limited quantity) Takachiho Peak (1,574m elevation) (Kansho Pork 300g) ... 2,280 yen (tax included, limited quantity) Hinamori Dake (1,344m elevation) (Kansho Pork 120g) ... 1,280 yen (tax included) Delicious ways to enjoy: - First, enjoy it as is. - Add sauce to your liking or dip it. - Combine with egg and serve over rice or pour over the katsu. *The egg sauce is made with a base of high-quality kombu from Hokkaido, combined with bonito dashi, light soy sauce, mirin, and sugar. <Limited Quantity Breakdown> *For the 500g and 300g, if you make a reservation by phone or inquiry two days before your visit, we can prepare them regardless of the limited quantity. (Reservation for seats is not possible, but if you wait during busy times, we can prepare the dishes as we have secured the ingredients.)

In the local dialect used in this area, 'Nishimoro' means 'The curry at this roadside station is delicious!' It embodies our motivation to encourage ourselves with the thought, 'We will make this a shop where many customers come!' and is reflected in the name of this menu item.
