Barley rice, tororo soup, dumplings with natural yam and mugwort, condiments, fragrant ingredients, dried horse mackerel※After 7 years of research, we have completed our proud tororo soup, which is made by drawing water from the famous spring water of Hakone, 'Eijyu no Inochi-mizu', boiling it, and adding a carefully selected blend of the finest ingredients extracted in our original ratio and method, using two types of aged miso made with rice koji abundantly, without any pre-preparation, and grinding it up with care in our own unique way for you upon receiving your order. The barley in the barley rice is 'Fiber Snow', a barley variety from Rokujou, Fukui Prefecture, which is comparable to Koshihikari rice from Uonuma. The rice used is 'Akita Komachi' from contract farmers in Aomori Prefecture who practice low-pesticide cultivation. We cooked it using 'Eijyu no Inochi-mizu' from washing the rice. As a palate cleanser, please enjoy the dried horse mackerel that has been dried by Numazu's dried fish artisan using Suruga Bay deep-sea water and sun-dried, and then grilled with white charcoal at our store (without dried horse mackerel is 2,200 yen).
