All the tea used in the sweets of Chamachi KINZABURO is made from tea harvested in Shizuoka Prefecture. The tea used in Chafuru is harvested in three different locations: Tendo, Honzan, and Okabe, as indicated by their names. Although they are all matcha, they differ in taste, aroma, and color. Tendo matcha has a strong astringency, Honzan matcha has a strong aroma, and Okabe matcha is sweet. Even within Shizuoka, there are such differences. Chafuru is used to take advantage of these characteristics.

The tea master's commitment starts with the selection of raw materials. From the origin and variety to the steaming of the leaves, taste, aroma, color of the water, glossiness of the leaves, and wrinkles, all five senses are fully engaged in assessing the tea. Next is the firing method. Whether to preserve the original taste of the tea or to bring out the characteristics of the tea to the fullest by using the optimal firing temperature. It is a moment when the master's sense of smell sharpens. And finally, the blending of tea leaves. By blending teas with different steaming and firing methods, tea varieties, and processing methods, a delicate balance is achieved with main roles, supporting roles, and enhancing roles. A tea that allows you to enjoy the aroma, taste, mouthfeel, color of the water, and the aftertaste. It has been crafted into a tea that you can enjoy all aspects of.
