In the heart of Hokkaido, in Tokachi Shimizu Town, there is a small pig farm run by a family in the windward of nature. Unlike the pork commonly distributed, Yabuta-san's pork is not administered artificial medicines such as 'vaccines' or 'antibiotics.' Instead, it mainly eats vegetables and grains from Yabuta-san's brother, Hideyuki Yabuta, who is also a pioneer of natural farming in Hokkaido (Yabuta Farm, Tokachi Aikoku Town). What surprised me when cooking was the delicious fat and tender meat quality. While the melting point of typical pig fat is about 40°C, Yabuta pork begins to melt at '33.3°C,' which means it starts to dissolve even at body temperature. Mr. Mizuno is a friendly person (who loves alcohol), and we have visited his farm many times. Now, regarding the eggs from this Farm Agricola. Inside the shells, there is not only egg white and yolk but also a strong commitment. The feed that the chickens eat is a custom blend made with '100% Hokkaido-sourced ingredients,' with 60% of the feed being rice, which brings out the unique flavor of the eggs. Additionally, by minimizing fish meal, there is no distinct odor typical of raw eggs.
