the classic santa fe dinner (santa feans discovered the blue corn tortilla.) a flat enchilada made with blue corn tortillas, lean ground beef or chicken and cheese. served with spanish rice and refired beans. choice of red or green chile. (available as a cheese-only enchilada - upon request.)

a favorite at maria's for years. a thick, choice new york cut, charbroiled to your specification, basted while cooking with fresh garlic butter. served with spanish rice, onion rings and a garden-fresh dinner salad.
