One of the three major ramen types in Hokkaido, 'Asahikawa Soy Sauce Ramen'. A double soup made from pork & chicken and seafood. The rich soy sauce is made by adding bonito flakes and dried sardines to the brewed soy sauce, and then adding ingredients like mackerel flakes and salmon flakes. The complex umami is concentrated, resulting in a deeply flavorful soup. *Limited time sale!!*
The sauce, blended with three types of soy sauce, brings out the sharpness and richness of the soy sauce, while homemade chicken fat and back fat add depth to the soup. The special chashu is simmered slowly on low heat for 5 hours, resulting in tender and melt-in-your-mouth chashu.
The basic flavor of our shop. A ramen based on the 'Shimosa Soy Sauce' that is not yet widely available in the market. It is finished with a clear and mellow soy sauce flavor and a rich soup made from chicken bones, providing a deep taste. The noodles are custom-made, medium-thin, and have excellent compatibility with the clear soy sauce soup. The chashu is made from shoulder loin, offering a tender and crumbly texture.
A bowl perfected through trial and error, harmonizing the richness and umami of Shimosa soy sauce with the refreshing taste of ginger. The soup is sharp with a strong ginger flavor, and the balance with the medium-thin noodles specially ordered from a long-established noodle shop in Tokyo is exquisite.
Crispy bean sprouts, cabbage, and carrots totaling 400g, with a total weight exceeding 800g! The noodles are made with low water content (below 30%) to ensure a strong taste and aroma of wheat! The chashu is simmered on low heat for 5 hours to create melt-in-your-mouth pork! The creamy tonkotsu broth combined with a special sauce made from four types of soy sauce pairs perfectly with the noodles!
The amount of back fat is more than twice that of Shimosa soy sauce. The flavor is also strong. The color is darker. It's a ramen that becomes addictive. The strong soy sauce flavor and the generous amount of fat make it an irresistible product for those who love rich flavors.
Red Eight Miso Ramen, blended with 'Hokkaido Miso' and several types of aromatic oils, has a rich, smooth, and well-balanced deep flavor.
The semi-dried bonito flakes have a texture and flavor similar to prosciutto, and the aroma and umami of the smoked bonito are addictive. It pairs perfectly with Shimosa soy sauce, and the last drop of the soup you drink is the most delicious ramen.
Using a base of Shimosa soy sauce, we add a rich and creamy soup made from pressure-cooked broth, and coat it with roasted garlic oil, resulting in a deep and flavorful taste that fills your mouth with the aroma of garlic with every bite.
