The aroma is modest, with a unique acidity of Drunken Whale, resulting in a Junmai sake that has depth yet a clean finish.
It is extremely dry, but when you take a sip, you can feel a subtle sweetness. However, as soon as you swallow, a wave of spiciness rushes in, delivering a surprising two-stage attack.
This is a honjozo made using sake rice 'Gohyaku Mangoku' and 'Yamada Nishiki', utilizing the soft water from our own well. The flavor is slightly sweet. It is recommended to enjoy it chilled or at room temperature, but a gentle warm 'nurukan' is also nice as it gently seeps into the body.
Aiming for a transparent taste, this sake has undergone continuous improvements in its brewing method and won a silver medal at the International Wine Challenge 2015. It has a dry flavor while also possessing a softness.
