This kaiseki course uses an abundance of seasonal ingredients, seasonal vegetables, and the freshest seafood. Please come and enjoy our kaiseki course for a dinner, a family dinner, or an important occasion.
Duck from Kyoto's long-established "Toricho" restaurant has a good fat content, but is less fussy and has a natural sweetness. For the soup stock, only the first broth of kombu and bonito is used, and the seasoning is simply salt only, the "Superior Salt Broth". Nobunaga leek" from Azuchi, Shiga Prefecture, has a high sugar content like a round, fat fruit, and when cooked, it has a delicious tender sweetness and texture. Once grilled, it is served in a pot as "yaki-negi" (grilled onion). For the sansho (Japanese pepper), we use Kyoto and Wakayama pepper brands to give the dish a fresh flavor and a deep taste.
