Jibu-ni, a representative local dish of Kanazawa, traces its origins back to the Azuchi-Momoyama period and was developed into its modern form during the Kyoho era of the Edo period by the first generation of Kaga clan's samurai chef, Funaki Den'nai, who added sudare-fu (a type of wheat gluten). The dish features tender duck meat, similar in texture to rare beef steak, combined with sudare-fu, nama-fu (fresh wheat gluten), mushrooms, and green vegetables, served in a broth resembling a Japanese-style sauce, accompanied by wasabi as a condiment, and presented in a special jibu bowl. You can choose between duck or chicken, and also enjoy the new version called 'Apple Jibu-ni,' which includes apples. *The photo shows 'Apple Jibu-ni.'

~Unraveling the history of apples (Aful) and snow hanging in Kanazawa's Nagamachi Samurai Residences~ In the late Edo period, a diary titled 'Diary of Attendance and Offerings' written by Ogawa Sennosuke, a close aide to the Kaga clan, mentions 'applying Aful on top of mochi.' 'Aful' refers to Western apples, and this is believed to be the first mention of Western apples in Japan. With the arrival of the Meiji Restoration, former samurai who lost their stipends transitioned to fruit cultivation due to the government's industrial promotion policies, and the areas around Hikosan, Takaoka-cho, Korinbo, Katamachi, and here in Nagamachi, near the current Seirei Hospital, were once apple orchards. A type of Japanese apple known as 'kaido' from the feudal period still remains in the Misono family in Takaoka-cho, and the practice of protecting apple fruits from bird damage with apple hanging from spring to autumn has transformed into the winter tradition of 'snow hanging,' represented by the Karasaki Pine in Kenrokuen. 'Apples' are the king of fruits, and the name of the local Nagamachi, derived from the Kaga Eight Families, was also referred to as 'Naga's apples.' The 'Aful Jibu-ni,' an evolved version of the local Kanazawa dish Jibu-ni, features a perfect balance of meat and the tartness of apples. The taste is astonishing, even surprising the knife-wielding samurai Funaki Den'nai, who created the sudare-fu.

We have luxuriously made a bowl with hot domestic beef. Enjoy it with our homemade sauce. Please serve it in a Goshikawan bowl. *This is the original Wajima lacquerware, named after the place. It is served in a bowl made by the late artist Isaburo Sumi, known for Wajima lacquerware.
