Our soup takes 5 days from preparation to completion. We carefully prepare pork bones and chicken carcasses, along with 12 types of natural ingredients, and simmer them for 3 days. By preparing all the ingredients in one pot, we are able to concentrate the richness and umami. Since each ingredient requires a different amount of time to extract its flavors, we calculate the finishing date and adjust the heat accordingly, adding each ingredient at the right timing. The soup is left at room temperature overnight after completion on the third day, and then further aged in the refrigerator for another day. This soup is the essence of 'Ramen Yamaya'.
