Takiawase is a labor-intensive dish where ingredients are boiled separately in different pots to bring out their flavors and then left to rest overnight. The taste of Ise Nishiki, which has been passed down from the first generation, Tobe Kin, has undergone a significant transformation under the fourth generation, Tobe Yoshirō, who is well-versed in the times and has turned it into a tea kaiseki restaurant. After years of diligent study, in the 19th year of the Heisei era, Ise Nishiki was reborn with the essence of 'hospitality' that is the core of kaiseki cuisine, reflected not only in the dishes but also in the store's appearance, rooms, and furnishings.
