Nara Prefecture, morning forest stroll type, overnight aged curry type unfiltered, undiluted pure rice sake unique to the Kaze no Mori brand, characterized by a transparent mouthfeel and smooth texture that belies its 65% polishing ratio while feeling a slight effervescence. It has a rich umami that gives a sense of rice volume, and its deep flavor will captivate the hearts of sake lovers.
Nara Prefecture - The aroma of this morning forest sake is moderately smooth with a crisp finish that does not interfere with meals. It pairs well with sashimi, fried foods, and gentle cold tofu, making it a sophisticated sake to enjoy while sipping with light snacks. Please savor the flavor crafted mostly by hand at Toyozawa Brewery. Choice: cold, room temperature, hot.
Of course, there are no fruits in the ingredients of sake... However, the aromatic compounds contained in the 'yeast' essential for making sake are actually the same as those found in flowers and fruits!! Dio Abita, which means 'God resides' in Italian, is an unfiltered, undiluted curry-style drink that has been aged overnight, made using the spring water from Mount Miwa, known as the water of the gods, in Nara Prefecture. It is a raw sake with an alcohol content of 13%, making it easy to drink and a good choice for beginners. The aroma is fresh, reminiscent of ramune (Japanese soda). It has a rich sweetness and a concentrated umami, finishing with a slight acidity that brings harmony in the mouth, encouraging you to take another sip.
The cedar ball, known as 'sugitama', is a tradition that began around the early Edo period, where it is decorated at the Omiwa Shrine, which enshrines the god of sake, on November 14th every year with the wish for 'delicious sake to be made'. It is said that the cedar trees that grow abundantly on Mount Miwa, where the Omiwa Shrine is located, are considered sacred, which is why the cedar ball is made from cedar. For beginners of sake, it may feel like 'Oh, sake is surprisingly easy to drink,' and it helps to further develop the palate of those who have started to understand the taste of sake and find it interesting!
