Mr. Mitani, owner of “Mitani”—a restaurant in Yotsuya, Tokyo, renowned for being extremely difficult to book—opened Kioicho Mitani Bettei in 2021 as a sister restaurant to Kioicho Mitani. Kioicho Mitani Bettei is based on the concept of “delivering the evolution of cuisine and the deepening of chefs’ skills,” and it also embodies Mr. Mitani’s desire to “showcase the growth of his apprentices.” Furthermore, the culinary concept is the same as that of Kioicho Mitani, allowing guests to enjoy carefully selected ingredients from across Japan paired with wine and sake.
