Our duck breast is made using carefully selected duck, cooked slowly at low temperatures. This method maximizes the umami of the duck meat, resulting in a tender and juicy texture. The surface is grilled to a fragrant finish while maintaining a moist texture inside, enhanced with our special sauce for added flavor. This is a carefully crafted dish that allows you to enjoy the deep taste and soft texture of the duck meat.
A dish made with fresh morning-caught chicken thighs, grilled with a special sauce unique to eel restaurants. The sauce, infused with the umami of eel, perfectly complements the juiciness of the chicken, creating a luxurious flavor that is enjoyable. This is a unique dish that cannot be found elsewhere.
Our freshly caught chicken thigh tataki uses fresh local chicken thigh meat, finished with a fragrant sear on the outside. The firm texture and juiciness that can only be experienced with fresh chicken are its characteristics. By lightly searing it, the surface locks in the umami while the inside retains the raw flavor, enhancing the inherent deliciousness of the chicken. Served with a special sauce and condiments, it is a dish with a perfect balance of flavors that cannot be tasted anywhere else.
