Niigata Prefecture [Special Junmai] Sake degree: +4 classified as light and dry, this sake born in Niigata has a smooth drinking experience like water and a refreshing aftertaste that enhances the flavors of the food.
Yamaguchi Prefecture [Junmai Ginjo] Sake Degree: +15. It is not just spicy; when you take a sip, a rich umami and a hint of fruity aroma waft through your nose. In the latter half, it has a good sharpness, and after swallowing, you can enjoy a dry aftertaste.
Mie Prefecture [Junmai Ginjo] Sake Degree: Not disclosed. This is the most popular product among the three types of Junmai from 'Saku'. It has a sweet and refreshing aroma like that of a pear, with a smooth sweetness and umami. The acidity provides a crisp and clean aftertaste. It is finished to be a very easy-to-drink sake.
Yamagata Prefecture [Junmai Ginjo] Sake degree +15, while being super dry with a sharp finish, it also has a hidden richness that feels wrapped in a soft layer. It has a light mouthfeel with subdued acidity.
Fukui Prefecture [Daiginjo] Crisp taste, refreshing aftertaste
Nara Prefecture [Junmai Daiginjo] Sake Degree: Not disclosed. A classic combination of Yamada Nishiki and Yeast No. 9, it is overflowing with deliciousness and sharpness, and the natural umami with transparency is 'high quality' itself. With a silky touch on the palate, the soft and spreading muscat aroma beautifully scents the refreshing mouthfeel. This is a Junmai Daiginjo that also has a refreshing acidity.
