This is Hokkaido Aki Beef (Katsuniku Breed) carefully selected by the chef. Unlike the black-haired Wagyu from Hokkaido, the Katsuniku Breed does not aim for the highest level of marbling. It has a moderate amount of marbling while having less excess fat, allowing you to enjoy the original flavor and tenderness of Wagyu, and above all, the deliciousness of the lean meat is its greatest charm. The rich taste of this meat, which has less marbling, is very suitable as the main dish in a restaurant, whether in a course or à la carte, after enjoying several appetizers in order.
The brown beef has less marbling and a rich flavor. Ichibo, which is a cut between the rump and sirloin, is slightly juicier than the rump.
