The salt is natural salt that has been dehydrated for three days using coarse salt from Okinawa, rich in minerals and with a mellow flavor. The sauce is a secret recipe that has been continuously added to since the establishment of the restaurant, deepening the flavor. We pay careful attention not only to the quality of the chicken but also to the umami-enhancing salt and sauce.
