The signature dish of the Basque region, 'Chuleton'. A T-bone weighing around 500g is grilled in a grand style, just as the local Basque asador (grill master) has cherished and passed down this culinary tradition. The exterior is perfectly roasted, with the flavors concentrated around the bone, while the center is bursting with the meat's natural juiciness, achieving a perfect cook. This is not just 'volume meat', but a T-bone where the layers of flavor are distinctly felt. The accompanying sauce is 'Piquillo Pepper Pil Pil Sauce'. This simple sauce, made by emulsifying the flavors of piquillo peppers, oil, and garlic, harmonizes astonishingly with the savory notes of red meat. The sweetness and smokiness of the peppers, along with the unique smoothness of the pil pil, enhance the meat's flavor, keeping it exciting until the last bite. Enjoy the meat by biting near the bone, savoring the richness of the red meat, and changing the flavor with the pil pil sauce, all while experiencing the grand essence of the Basque region.

The part of the lamb that allows you to taste its flavor most directly, a T-bone weighing around 180g, is grilled robustly on a 'planch' (iron plate). This dish features the rich flavor and aroma unique to bone-in cuts, along with the milky sweetness characteristic of lamb that gently spreads across the palate. By searing the surface quickly on a high-heat planch, the outside becomes crispy and fragrant, while the inside remains moist, juicy, and tender, with the most intense flavor concentrated around the bone. There is almost no gamey taste, and the balance of the lean meat's sharpness and the fat's sweetness makes it easy to enjoy, even for those trying lamb for the first time. It can be enjoyed simply with salt or lightly finished with lemon. It pairs well with a wide range of wines, from robust red to rosé and sparkling. This dish recreates the Basque culture of 'grilling meat simply' in the planch style of Rizaran, where aroma, texture, and flavor come together in a harmonious dish of bone-in lamb.

We have grilled the richly flavored bone-in pork loin in a bold manner on a plancha (iron plate) as is characteristic of Rizalan. Despite being around 300g in volume, this dish allows you to enjoy the juiciness and tenderness that comes from thick cuts. By searing the surface on a high-heat plancha, the outside becomes fragrant while the inside retains the moist meat juices. The flavors particularly concentrate around the bone, allowing you to experience the sweetness of the fat and the robust flavor of the lean meat all at once. The refined sweetness and milky fat of the pork loin are delicious enough just grilled, and when eaten simply with salt or lemon, the natural taste of the meat stands out. It pairs well with a wide range of wines, from white to rosé to lighter reds, making it a standout plancha dish at the center of your meal. This is a dish that embodies Rizalan's spirit of 'enjoying meat boldly,' making you want to pick up the bone and nibble it until the end. Please enjoy it while it's hot.

The paella is prepared in a size suitable for 2 to 3 people. This classic Spanish dish, 'Seafood Paella,' is cooked to infuse the rich flavors of seafood into each grain of rice. Utilizing the umami from mussels, shrimp, squid, and other seafood, it is slowly simmered with broth (caldo), resulting in fluffy rice with a crispy bottom known as 'socarrat.' A squeeze of lemon at the end brings together the rich aroma and the essence of the sea, creating a vibrant flavor typical of Spanish cuisine. It is a highly satisfying dish that can be shared or enjoyed as a main course.

The deep flavor of squid ink combines with the sweetness of squid and the scent of the sea, resulting in fluffy grains of rice, with a crispy 'socarrat' formed at the bottom. Squeezing lemon enhances the flavor, making it refreshing despite its richness, leaving an unexpectedly light aftertaste. This dish offers a 'concentrated flavor of the sea' that is distinct from seafood paella.

This fragrant 'meat paella' is made by infusing the rich flavor of lamb and the sweetness of slowly cooked bell peppers into the rice. The lamb is seared to a crispy exterior and then simmered in a broth, allowing the unique milky sweetness and umami of the bone-in meat to dissolve into the soup, while the rice absorbs all those flavors and cooks up fluffy. The natural sweetness of the bell pepper is enhanced by cooking, and when combined with the aroma of the lamb, it creates a deep flavor reminiscent of 'Basque and inland regional cuisine.' As you eat, the umami of the meat, the sweetness of the vegetables, and the toasty aroma of the crispy rice come together in this dish. A squeeze of lemon at the end lightens the richness of the lamb, making it enjoyable until the last bite. This paella pairs very well with wine and offers a high level of satisfaction.
