This is a unique dish that can only be enjoyed at 'Horoan' in Japan. It is made with rich white fish such as Nodoguro and Kinmedai. The fish bones are roasted in the oven, allowing the umami extract to seep out, and then sushi rice is placed on top of the bones, which are further baked in the oven. The surface of the sushi is fragrant and crispy, while the center has fluffy rice that absorbs the umami! A new sensation, piping hot sushi.
From the opening in November until mid-March, we offer Matsuba crab from the San'in region (Kasumi, Shibayama, Sakai Port, etc.), and until the end of December, we also provide Kōbako crab (Seiko crab). From early summer to late autumn, we have hairy crab from Hokkaido. The crabs are sourced live, carefully boiled in salt, then cooled and hand-prepared one by one, with all the meat packed back into the shell. It takes about 3 to 4 hours to complete, a labor-intensive delicacy. When enjoying, please savor the delicate umami and sweetness of the crab with our homemade Tosa vinegar or with lemon and salt.
