We do not just focus on appearance; we carefully select 'truly delicious meat.' We prioritize whether the lean parts have a rich flavor, and we meticulously check the quality and color of the fat, as well as the balance with the lean meat. Instead of flashy marbling, we only offer Japanese Wagyu that has been carefully selected based on whether it is 'delicious to eat.'
The beef tongue is carefully managed in its fresh state without freezing and is served hand-cut. From a single piece, we provide cuts suitable for each part: the root, middle, tip, and underside, each with its own seasoning. Enjoy the texture and juicy flavor that cannot be experienced with frozen meat.
The castle's sauce is handmade at the restaurant. By insisting on non-heating, the aroma is enhanced when grilled, bringing out the umami of the ingredients even more. There are five types of our homemade marinade. The 'Green Onion Salt Sauce' is made by grating green onions and mixing them with sesame oil. The 'Miso Sauce' uses Haccho miso, which has richness and sweetness. The 'Spicy Miso Sauce' is made by grating fresh chili peppers and mixing them with sweet miso. Additionally, there are two types of soy sauce-based sauces, each seasoned to match the specific cuts of meat: kalbi, loin, and harami. Experience the depth of grilled meat through its aroma and aftertaste.
The basic kimchi comes in four varieties: napa cabbage, yam, daikon radish, and cucumber. Each is seasoned differently to highlight its unique qualities. The castle's kimchi is made to be easy to eat like a salad and is lightly pickled to pair well with meat and alcohol.
Inside a bag-shaped cut of high-quality tongue, it is filled with plenty of green onions seasoned with a special sauce. The umami and aroma of the green onions are slowly steamed within the meat, and the moment you bite into it, the juices burst forth, filling your mouth.
