You can see the kitchen through the glass, and I feel excited watching the eels being grilled while being fanned with a uchiwa (Japanese fan). The unaju (grilled eel over rice) is fluffy and steamed, with a modest char typical of the Kanto style. The sauce is a sweet and savory blend with a fragrant soy sauce that whets the appetite. The eel is thick and beautifully cooked without burning, and it pairs very well with the rice. The liver soup has a creamy and soft liver that leaves a strong impression, and the umami spreads smoothly. Additionally, the pickles served as a palate cleanser are delightful, and apart from the eel, I also enjoyed the melt-in-your-mouth texture and Japanese flavor of the kakuni don (braised pork belly over rice).
