Was ist Kyoto?: Kyoto is a prefecture where culinary tradition and seasonal sensitivity shape an inviting, quietly refined dining culture. Visitors encounter kaiseki that highlights nuanced dashi, temple-inspired shojin cuisine, comforting yudofu, and homestyle obanzai that makes thoughtful use of Kyoto vegetables. The region is also associated with delicate wagashi and desserts featuring Uji matcha, while local sake from the Fushimi area is often paired to emphasize balance and aroma. Tucked into wooden townhouses and along calm lanes, many venues favor restrained presentation, attentive service, and harmony between tableware and ingredients. Markets and small producers encourage menus that shift with the calendar, keeping flavors closely tied to place and time. A distinctive thread in Kyoto’s food history is the interplay between courtly tastes and monastic discipline, which has long nurtured an appreciation for nuance over showiness. As a result, dining here often feels rooted yet evolving.
Was ist Shabu Shabu?: Shabu Shabu highlights the pleasure of cooking at the table, with paper-thin slices of beef or pork swished through a gently simmering broth. A clear kombu base is common, though some places offer aromatic or spicy variations. Vegetables, mushrooms, tofu, and noodles are set out for guests to add at their own pace, allowing each bite to be cooked to a preferred doneness. The hallmark motion—swirling the meat briefly until it blushes—yields a delicate texture and clean flavor. Dipping sauces such as nutty sesame and citrusy ponzu invite different balances of richness and brightness, often complemented by scallions, grated radish, or chili. Toward the end, the remaining broth is enjoyed with udon or a light rice porridge, capturing the essence of the ingredients. The experience rewards unhurried conversation, steady aromas, and a sense of shared rhythm around the pot.

When you go up to the 9th floor, a calm atmosphere spreads out in the store, and the chic lighting is pleasant. The first dishes that were served, the marbled beef and the tender brand pork, are beautiful and instantly lift your spirits just by looking at them. You can choose between shabu-shabu or sukiyaki, so it's fun to try both flavors. The meat is so tender that it melts in your mouth even when cooked, and when paired with eggs or sesame sauce, the umami spreads throughout your mouth. The side menu is also rich with vegetables, udon, and edamame, allowing for flavor changes that keep you from getting bored until the end. The staff's thoughtful gesture of discreetly replenishing the broth is also appreciated, making for a very satisfying all-you-can-eat experience.

The shabu-shabu with crystal pot has a clear broth, and I was impressed by the rich flavor of the pork. The combination of salt and lemon is refreshing, allowing you to enjoy it without feeling heavy until the end. The shabu-shabu with conger eel is fluffy and elastic, and when paired with plum paste or ponzu, the aroma expands even more. The tempura corn and special shrimp mayo are also diverse, making it hard to put down my chopsticks. The staff is friendly and entertaining, and the conversation flows, causing me to linger longer than planned. On the way out, I received a rice ball, which made me feel fulfilled even in my heart.

For dessert, each person could choose from the menu, allowing us to enjoy everything until the end. The seats are spacious and comfortable, so we could relax while spending time there. The interior is clean, and the ordering process is easy to understand and comfortable.
