Was ist Wakayama?: Wakayama blends sea and mountain into a dining culture shaped by abundance and craft. Coastal towns draw on the Kii Channel for seasonal fish—tuna, sea bream, and hardy winter catches—while inland villages spotlight citrus, plums, and herbs such as Kishu sansho. Local tables range from casual eateries serving chuka soba known as Wakayama ramen, with a soy-and-pork-broth balance, to places focusing on hot pots like kue during colder months. Yuasa’s longstanding soy sauce making and fruit-forward confectionery reflect a regional fondness for fermentation and preserving. On Mount Koya, shojin-style cuisine associated with temple traditions offers a measured approach to flavor. Markets, seaside diners, and farm-side stands together create a route of tastes that rewards unhurried exploration. Over generations, pilgrimage paths through the Kumano area have influenced hospitality and simple, sustaining menus, giving the prefecture a quietly distinctive food story that visitors often remark upon.
Was ist Sushi?: Sushi highlights the delicate balance of vinegared rice and carefully prepared seafood, with an emphasis on clean flavors and precise technique. Many counters present nigiri one piece at a time, allowing diners to notice details such as rice temperature, the cut of the fish, and a light brush of soy or a touch of citrus. Common styles include nigiri, maki rolls, temaki, and chirashi, while occasional searing, marination, or aging brings added depth. Seasonal selections often guide the progression of a meal, and some venues offer an omakase format that follows the chef’s rhythm. Beyond fish, vegetables, egg, and shellfish appear in thoughtful combinations. The experience may include conversation with the chef, pacing that builds from lighter bites to richer pieces, and a focus on texture as much as taste. Whether at a counter or a table, the appeal lies in craftsmanship and the expression of each ingredient.

We had the omakase course and everything was excellent, so we ordered a few more dishes. The freshness of the ingredients, the careful preparation that conveyed its flavor, and the hospitality of the chef and everyone else were all top-notch, allowing us to enjoy our meal in a very pleasant atmosphere. Since it was our first time in Shirahama, we appreciated the consideration shown to us. While my wife and I were discussing where to go sightseeing in the afternoon, we received precise advice that helped us a lot. Thanks to that, we had a very fulfilling sightseeing experience this afternoon, and we are very grateful. Since we live in Kanagawa, we can't visit regularly, but I would love to be a regular customer! The lady who guided us when we were leaving the parking lot was very lovely. Thank you very much.

I used this for my first trip to Wakayama. I requested a seat with a view of the sea when making the reservation, and they actually had me at a counter seat where I could see the sea while they prepared each piece. The course lasted about 60 minutes and included an appetizer, 10 pieces of sushi, and the sushi had a slightly thinner rice (is that typical for Wakayama?). There was also abalone steamed in wine, miso soup, and dessert, all of which were very delicious and I was extremely satisfied. Each piece was a bit small, so it might not be enough for men who want to eat a lot, but it was more than enough for women. Considering everything, I think the cost performance is very good. It was a place I would like to use again if it were nearby.

The carefully selected local fish and shellfish from Kushimoto, combined with the gently fluffed red vinegar rice, are exquisite. The chef was kind and attentive, explaining the sushi toppings in detail to us, who were first-time visitors, and I was happy that he casually engaged in various conversations with us. I would like to try going in the evening next time.

When I casually entered for lunch, I was impressed by the stylish interior that exudes the warmth of wood. In addition to the counter, there are private rooms and tatami seating, allowing for a relaxed dining experience. The sushi has a glossy appearance, and the harmony between the fish and the rice is wonderful, with the wasabi perfectly balanced. The freshly fried tempura, especially the sweet potato, is fluffy, and the aroma of the batter is irresistible. The richly flavored red miso soup provided a comforting finish, greatly enhancing my satisfaction. There is a coin parking lot nearby, making it easy to visit by car, and I feel this is a place where you can casually enjoy sushi.

When I travel, I want to eat local food there!
I went to a restaurant in Wakayama where you can eat sushi made with local products!
Sushi Yoshida
The name on the curtain says "Wakamatsuya," but the restaurant is divided inside.
To the right is Wakamatsuya, a casual restaurant.
On the left is Sushi Yoshida, which has 6 seats at the counter and is by reservation only.
I didn't expect the restaurant to be separated inside, so it was like a hideout, known only to those in the know!
The table napkins are beautifully folded and gorgeous!
I think it's rare to see such a thing at a sushi restaurant.
Omakase" is the menu for 12,000 yen!
We are very much looking forward to the omakase menu, which uses local products from Wakayama!

This is a hot topic these days!
A special grating board for Wasabi "Kouzame"!
Look carefully! Do you see the word "Wasabi"?
If you do it here, the wasabi becomes fluffy and creamy!
If you look closely, you can see that some of it says "wasabi"!
I spotted it right away!
First, we started with the entrée!
Sagi!
It's so crunchy and soft!
I guess this is what you mean when you say it's comfortable to chew!
Horse mackerel
It looks light, but when you eat it, you can feel the fat.
It goes great with fresh ginger.
Mochigatsuo
This is a rare bonito that is only available in Wakayama at this time of year.
It's so fast that the only way to eat it raw is to eat it locally!
On this day, the fish was landed at 15:00!
Contrary to its reddish color, the taste is light and has no fishy smell at all!
However, the elasticity of the fish is so firm that it bounces off your teeth!
The local way to eat it is with ginger soy sauce or onion ponzu!
Either way, it was delicious!
I had never had bonito like this before and immediately wanted to try it again!
■Katsuo Tataki
Mochigatsuo Tataki (bonito tataki) from earlier.
The aroma is delicious because of the added savory flavor!
I had this one with a dash of salt and plenty of wasabi!
Hiokigawa Natural Eel
I didn't know that eels could be caught in Wakayama!
I'm sorry to be so rude, but I was honestly surprised!
It was fluffy and fatty, and the sauce was light and easy to eat!
Nodoguro TKG
A little rice, a dragon egg from Oita Prefecture, seared nodoguro (a type of tuna), fluffy wasabi, and a little bit of rice mixed with the wasabi! The soft and tender Nodoguro tuna, and the rich egg wrapped around it.......fainting in agony, happy~!
Hamo Salt Ramen
The broth made by simmering nodoguro, kinmedai (sea bream), and ishiki (hamo char) is clear and you can taste the minerals in it!
I was shocked because I never thought I would be served authentic ramen at a sushi restaurant!
I was relieved to find that I was just in the mood for something hot!
Shako
A plump and firm shrimps!
I don't get a chance to eat them very often, so they are very rare and precious!

It is very soft and has a slight sweetness!
Yokowa is served as it is at first, and then pickled at the end.
It's the same thing, but it gives you a different taste!
Oma's sea urchin is already creamy and delicious!
Of the nigiri, the best of the day was the sardine!
The sardines were finely cut into small pieces, so they were soft and fluffy when you put them in your mouth!

Dragon eggs and wasabi!
Mixed together so generously, it's so thick you'd think you were eating risotto!
This is a foul!
We were told to stop at the halfway mark, so we stopped crying!
Oh, my God! Then, sea urchin was added!
This is no good! This is agony level!
Too delicious, too happy, too bad! This is the ultimate TKG!
◼︎ Aka Dashi
Gentle taste with ao and shijimi seaweed.
Forgot to take a picture...
◼︎Makimono Negitoro (Negi Toro)
Negi (green onion) is left as long and slender as possible.
According to the owner, the main role of Negitoro is the green onion!
Of course, there is the taste of Toro, but the crunchiness and crunchiness of the green onion can be felt directly and is delicious!

The dish ended with a refreshing shiso maki!

Thank you for having locally produced food at your destination!
The owner's hospitality is very much appreciated, and his explanations are so detailed that you can't help but listen to them!
I am always curious about things I hear and see for the first time!
The distance of the counter is what makes this space so special.
I'm not used to this kind of restaurant, so I get a little nervous, but I was able to enjoy myself from start to finish thanks to the friendliness of the owner!
I hope I can come again someday.
Thank you for the food!
