The broth is a light soy sauce flavor made without any chemical seasonings, based on Rausu kombu carefully extracted using weak alkaline ionized water every morning and Katsuo dashi from Makurazaki. The domestic beef offal is selected strictly from the small intestines of domestic beef. It has a plump texture that bursts with umami, adding richness and flavor to the soup! The cabbage is sourced from Yoshimoto's farm in Unzen City, Nagasaki Prefecture. They are particularly particular about composting, resulting in sweet cabbage.
