In the year when Shizuoka sake took the nation by storm, this brewery became the most popular sake, leading the Shizuoka Daiginjo category. Shizuoka yeast HD-1 is named after the president and toji (master brewer) of this brewery. This Kaihatsu Hiyazume is the local flagship sake produced without compromise at this brewery, and it is the first bottle of Shizuoka sake that you want to taste.
Among Shizuoka sake, this brewery is the most particular about rice cultivation. It is a direct disciple of Mr. Kawamura, who led Shizuoka sake, and this flavor truly represents the essence of Shizuoka sake. Refreshingly dry and in good condition the next day. Excellent with sashimi.
The first disciple of Master Kawamura, who led the Ginjo Kingdom Shizuoka, is named Denichirō. This sake is made by pushing Shizuoka yeast to its limits, allowing you to enjoy the dry taste characteristic of the Shizuoka style. It is one of the hidden sakes from the local Shizuoka area that is hardly shipped outside the prefecture.
Across the country, there are groups of sake brewers known as toji, and in Shizuoka, there was the Shida toji in the Shida area. This Shida area is known for its popular brands nationwide, and this is one of them. It is a smooth, slightly dry sake from the brewery closest to the source of the Setogawa River in Shida.
A small brewery that uses the rare natural brewing method Yamahai and Kimoto production in Shizuoka Prefecture. As a result, the quality of warm sake is the best in the prefecture, and it is also delicious when served cold! It has a slightly full-bodied dry taste.
