Masahiro Wada, the current owner of Taishoken, is the fourth generation to maintain the jiyaki tradition since its establishment. His eels are grilled slowly in rows and are characterized by their thick, plump texture and deep flavor. Mr. Wada uses carefully selected eels from all over Japan and adds his own unique twist to the traditional technique, aiming to produce eels of "second-to-none" quality.
